This is a really fresh, crunchy summer salad that is sweet and delicious and not at all boring.

I typically don’t like fruit in my salads but with the Thai influence in this Salad, the mango is amazing.

FAT BURNING PLATE NOTE: You need to add a serving of protein- A Grilled Fish topped with a little bit of the salad and dressing is perfect!

  • 1 cup Rocket / Arugula roughly chopped
  • 2 Spring Onions (Scallions sliced
  • 1 cup Cabbage Shredded - White or Red
  • 1 Cucumber sliced
  • 1/2 Red Capsicum / Red Pepper Deseeded and chopped
  • 1/2 Avocado diced
  • 1 Mango chopped
  • 1 Lime Juiced
  • 2 Tablespoons Extra Virgin Olive Oil
  • 1 pinch Sea Salt Celtic or Himalayan Sea Salt is best
  • Ground Pepper to taste
  1. Chop everything and put into a bowl.
  2. Add Lime juice, olive oil, salt and pepper straight into bowl with salad ingredients.
  3. Toss well and put in fridge for 20 minutes
  4. Cook your favorite protein (fish, chicken, tofu, tempeh) and then serve.
