These are so flavorsome and moor’ish!

I have to say though, that although they have all healthy ingredients, cooking nuts does damage the oil in the nuts and can make it go rancid.

SO these are a treat for when you have friends over or want something with flavor on movie night instead of popcorn or chips.

Ingredients
  • 0.75 Raw Almonds
  • 0.25 Sweet Potato About 1 inch
  • 1 pinch Celtic Sea Salt
  • 2 tsp Extra Virgin Olive Oil
  • 2 tsp Rosemary Fresh - Finely Chopped
  • 1 clove garlic
Instructions
  1. Pre-heat oven to 140C / 285F
  2. Line a baking tray with parchment paper / baking paper.
  3. Cut Sweet Potato into very fine slices and then put slices together (like a deck of cards) and cut into quarters.
  4. In a small bowl put in almonds and 1 teaspoon oil. Mix to coat.
  5. Spread almonds over half of baking tray
  6. In the same bowl put the sweet potato and cover with oil. If you need more put half to 1 teaspoon in.
  7. Spread Sweet Potato over other side of baking tray. Make sure none are overlapping.
  8. Cook for 20 minutes
  9. Take Rosemary leaves off Rosemary stalk and finely chop.
  10. Crush and roughly chop garlic into around 6 pieces
  11. Take baking tray out of oven and sprinkle 1 teaspoon of Rosemary and garlic over nuts and sweet potato
  12. Put back in oven for 10-15 minutes. WARNING: Watch Sweet Potato as it can go from orange and crispy to burnt very quickly.
  13. Take out and let cool
  14. Place in a bowl. Add a pinch of salt, add another pinch of chopped rosemary (optional) and mix. NOTE: You can take out the garlic pieces if you like before serving. Serve.
