Ingredients
  • 1 cup Quinoa cooked - I mix red and white Quinoa
  • 1/2 cup Raw Pistachio Nuts peeled
  • 1 cup Red Cabbage finely chopped
  • 1 cup Spinach roughly chopped
  • 1 cup Rocket / Arugula roughly chopped
  • 1 Carrot finely chopped
  • 1 cup Cherry Tomatoes chopped
  • 1/2 Avocado finely chopped
  • 1/2 cup Snow peas or Sugar Snap Peas chopped
  • 2 Spring Onions (Scallions chopped
  • 10 Stalks Cilantro / Coriander leaves finely chopped (including stalk and leaves)
  • 2 tablespoons Extra Virgin Olive Oil
  • 2 tablespoons Apple Cider Vinegar
  • 1 Pinch Sea Salt Celtic Sea Salt or Himalayan Sea Salt is best
Instructions
  1. Cook Quinoa and let cool for 20-30 mins
  2. Chop all ingredients and add to Quinoa
  3. Add dressing straight onto Salad and toss well
  4. Serve and enjoy!
