An omelette is only limited by your imagination and you can have it at any time of the day. It is great for breakfast or team it with a green salad for lunch or dinner.

I’ll give you one version but you can add anything you like to it and change it up depending on the time of the day and your personal tastes.

I love having the Fat Burning Salsa on top.

Ingredients
  • 4 Eggs Preferably Organic
  • 3 tbsp Water
  • 1 Handful Mushrooms chopped
  • 1/4 cup Broccoli finely chopped
  • 1/2 Capsicum / Peppers any colour
  • 2 Handfuls Spinach
  • 1/2 cup Tomatoes sliced
  • 1/2 Avocado sliced
  • Other Suggestions: Scallions / Spring Onions Onions Olives Carrots Beans (eg. Red Kidney Black Beans etc) Green Beans
Instructions
  1. In a bowl whisk the eggs and the water.
  2. Lightly cook the vegetables (NOT the tomatoes or Avocado) in a fry pan but don’t overcook. The vegetables should keep their vibrant colour. If using spinach then add just as the other vegetables are about ready. TIP: Add a couple of tablespoons of water to steam the vegetables
  3. Add the eggs to the pan and then move the pan around so the egg covers the pan. Separate any clumps of vegetables with a fork.
  4. Put slices of tomatoes on top of the mixture. Turn down heat so the bottom doesn’t burn and place lid on frying pan.
  5. When egg is cooked through and cooked on top it’s finished.
  6. Place on plate and then add slices of Avocado on top. TIP: This is delicious with the Salsa lightly spread over the top as well.
