I REALLY love the mix in this wrap. It’s also great in handrolls.

If you don’t like tuna you can always use shredded chicken or tofu.

VEGAN OPTION: Use tofu in place of tuna.

Ingredients
  • 1 Wrap Mountain Bread / Whole Wheat Tortillas / Gluten Free Wrap
  • 95 grams Tuna canned - in brine, springwater or Olive Oil
  • 1 cup Spinach chopped
  • 1/2 Tomato diced
  • 5 Kalamata olives pitted and sliced
  • 1 Spring Onion / Scallions sliced
  • 15 grams Pepita Seeds (pumpkin seeds) roughly chopped (and/or sunflower seeds)
  • 1/4 Avocado diced
Instructions
  1. In a bowl mix the flaked tuna (or tofu), diced tomato, sliced olives, sliced spring onion, chopped pepita/sunflower mix and diced avocado.
  2. Lay out wrap and put spinach leaves on the wrap in a section.
  3. Spoon on the tuna mixture and spread out evenly.
  4. Carefully roll the wrap making sure to keep it tight and compact.
  5. Cut in half.
