I originally found this recipe on EatDrinkPaleo.com. As always I make variations but I need to give credit to Irena for the original recipe as it’s one of the best EVERYTHING free recipes I have come across in a LONG time.

I like to add protein to most snacks so I have an all in one snack. Having a good quality, organic, nothing artificial added, good tasting protein powder makes life that little bit easier.

I need to mention here, the taste of the biscuits will depend on the quality of your protein powder. If you don’t have any protein powder that has a nice flavor then don’t add it or keep the amount low.

These ones are soft’ish. If you would like a dry, hard cookie then try this way: Christmas Cookies. It’s the same recipe, just slightly different at the end.

Ingredients
  • 1 banana
  • Dry Ingredients
  • 0.25 cup Coconut Flour
  • 2 tbsp Arrowroot Flour
  • 0.5 tsp Baking Soda
  • 4 tbsp Cacao powder raw
  • 1 serving Protein Powder
  • Wet Ingredients
  • 0.5 tsp Apple Cider Vinegar
  • 2 tbsp Coconut Milk mainly the hard cream
  • 3 tbsp Coconut Oil melted (don't boil)
  • 1 tbsp Organic Vanilla Essence
  • 1 tbsp Rice Malt Syrup
Instructions
  1. Preheat oven to 160C/320F
  2. In a food processor add the banana broken up into several pieces
  3. Add the Dry Ingredients
  4. Soften or melt the Coconut Oil on a very low heat until just liquid.
  5. Add to the Food Processor bowl with the remaining Wet Ingredients
  6. Mix on Medium Speed until all combined. NOTE: It can be hard to handle this mixture when it is too wet so I add 1 tsp of Coconut Flour at a time until the mixture becomes a ball. IMPORTANT: For every 4 additional tsp of coconut flour, add 1 tsp of Coconut Oil (hard is fine but mix well)
  7. Line a baking tray with parchment or baking paper.
  8. Roll a heaped teaspoon mixture into a ball and then squash with your palm onto the baking paper.
  9. Quick Way: Cook in oven for 30 minutes
  10. Take out and carefully turn cookies over
  11. Put back in oven for another 20-30 minutes. (NOTE: The better way to do it is to turn every 20 minutes for 1 hour = 2 turns but I am lazy and just do it once!)
  12. Let cool on a wire rack so they don't sweat and stay crispy on the outside.
